Creamy Dairy-Free Pumpkin Smoothie

This Creamy Pumpkin Smoothie is loaded with vitamin A and antioxidant carotenoids and is a good source of vitamins C, K and E, and lots of minerals, including magnesium, potassium and iron. I’ll drink to that!

Anyone want some pumpkins? We’ve got an abundance with plenty to share! Every other day, it seems, I’ve been cooking up a couple of pie pumpkins in the slow cooker, a method I read about at Simply Sugar and Gluten-Free.

I’ve made pumpkin bars, pumpkin pie, dehydrated pumpkin granola balls (total bomb!), pumpkin puree for my dog  (she needs to lose some weight) and today, a pumpkin smoothie. Let me know if you agree that it tastes a lot like chilled pumpkin pie served in a glass! Creamy Dairy-Free Pumpkin Smoothie

Total Time: 3 minutes

Yield: Serves 2

Creamy Dairy-Free Pumpkin Smoothie

Ingredients

  • 2 cups ALMOND MILK
  • 1/2 cup cooked PUMPKIN PUREE
  • 1/4 cup raw WALNUTS
  • 1 APPLE, cored and quartered
  • 3 tablespoons no sugar added APPLE BUTTER
  • 1 tablespoon MAPLE SYRUP
  • Pinch SEA SALT
  • 1-2 cups ICE

Instructions

  1. Blend all ingredients, except for ice, on high in a high-powered blender (such as a Blendtec) for one minute. Add ice and blend until smooth. The colder the better!
  2. Add additional almond milk or water to adjust smoothie consistency to your liking.

Pumpkin pie in a glass? Sign me up! I must have missed Amy's slow cooker method. That's genius! I have everything at home except the apple butter. Any suggestions for quick subs there? Thanks for sharing such a great recipe!

Hi Stephanie! You could leave the apple butter out and add your sweetener of choice. I like Tap 'n Apple apple butter because there is no added sugar … and the carb count is pretty low. No biggie leaving it out though 🙂

Okay, this will be a huge winner with my kiddos. Their favorite fall dessert is my crustless pumpkin pie. So I am sure that they would think this was a total treat. Especially if I call it a pumpkin pie milkshake instead of a smoothie (they have caught on to my tricks that my smoothies are full of secret healthy ingredients, so while they drink them they do not ask for seconds and thirds anymore). Totally cool recipe Lex! Cannot wait to try this one. I have 3 pie pumpkins sitting on my counter from the farmer's market this weekend.

Yummo Lexie! I will certainly have to try this, in fact, this may be what we are having instead of pumpkin pie on Thanksgiving! Do you by chance have a recipe for dairy-free, egg-free pumpkin pie that actually resembles a pumpkin pie? 😀

How's that new bed? You deserve a week's sleep in it after last week! So about a GFCFEF pumpkin pie … I think Spunky Coconut is working on one. I tried last year — thickening with flax and chia eggs — but it the consistency was ODD. There are some suggestions in the comments of my recent Adopt a Gluten Free Blogger post. I will definitely let you know if I try one and it's a success.

This looks amazing! I also just made my first pumpkin puree (and Gromit loves it too), but the crock pot seems much better than heating the entire oven. You should have a pumpkin week because some of your other treats sound awesome too! :oD

made this this morn! Yummy! I used pecans, and stevia as a sweetener. Also added an orange wedge and chia seeds and left the apple butter out…i seriously love my blendtec and that it can turn whole nuts and whole apples into something creamy!
