With a few simple ingredients and 30 minutes you can make this one-dish breakfast that’s sure to please! For the egg lovers and eaters, this German Apple & Cranberry Puff Pancake recipe is great, easy and quick. I’ve made it four times this week. Must be the German in me!

German Apple Puff Pancake

Gluten-Free | Casein-Free | Citrus-Free | Corn-Free | Dairy-Free | Fish-Free | Peanut-Free | Shellfish-Free | Soy-Free | Easily Tree Nut-Free (depending on the milk) | Wheat-Free | Sesame-Free | Yeast-free | GFCF | Vegetarian

Serves:  4
Prep Time:  5 minutes
Cook Time: 20-25 minutes

Ingredients:

2 tablespoons extra virgin COCONUT OIL or LIGHT OLIVE OIL

4 large EGGS

3/4 cup non-dairy MILK (I use SILK® Almond Original)

1 tablespoon MAPLE SYRUP or 20 drops LIQUID STEVIA

1 teaspoon gluten-free VANILLA EXTRACT

3/4 cup Bob’s Red Mill GF All Purpose Baking FLOUR or this blend

1 teaspoon corn/aluminum-free BAKING POWDER

1/2 teaspoon SEA SALT

3 tart APPLES, cored and sliced into thin wedges

1/4 cup fresh CRANBERRIES (optional)

2-4 tablespoons COCONUT SUGAR or sugar of choice (optional if avoiding sugar)

1 teaspoon CINNAMON

Directions:

1. Preheat oven to 400ËšF.

2. Heat oil in oven in a 10″ pie plate or 13x9x2″ pan (glass or ceramic).

3. Add to blender and blend on low until combined (or mix in medium bowl with hand mixer); eggs, milk, syrup, vanilla, flour, baking powder and salt.

4. Remove pan from oven and arrange apple wedges and cranberries in bottom of pan.

5. Pour batter over apples and cranberries.

6. Mix the sugar and cinnamon in a small bowl and sprinkle over batter.

7. Bake 20-25 minutes. Allow to rest a few minutes and serve with or without a drizzle of syrup.

Notes:

1. Not gluten-free? Wheat flour works just fine.

2. If you like your apples peeled, go-ahead and peel ’em … especially if they aren’t organic.

3. Pancake will puff up in oven and deflate as it cools. This is normal.

Lexie, this sounds fantastic. I am so thankful to have found your site as I'm learning to cook gluten/casein/egg free. What would you suggest I can substitute for the egg in this recipe?

This puff is beautiful, Lexie! I bet it would be the perfect thing to serve at a brunch (you'd get a lot of ooh-ing and ahh-ing, for sure). Apple and cranberry is such a delightful combination, too.

So pretty. I have been a total slacker on the baking front–mostly because I know I don't need the goodies, but my poor family sure would like this and they have suffered long enough. Mama just needs a little self-control and your recipe to make them happy again.

I grew up on apple pancakes – I have a German mom. It was my favorite meal – and we really did have it as a dinner treat every now and again. Love this g-free version!

I made this pancake for breakfast this morning and it was really good! I made 2/3 of a batch and I only had one egg, so made up the rest with egg replacer. It turned out a bit more spongy than expected and needed about 30+ minutes to cook but was still delicious and very filling!

I have made Puff Pancakes for years and my boys still get excited every time as they watch it rise in the oven and then start to fall as it comes out! 😉 Awesome picture too, Lex!

I just want to thank those who leave comments! It warms my heart, but more importantly, confirms that these recipes work or … don't work. Thanks to Wendy and Christine for reporting back. Christine; I've been playing with an egg-free version which probably is like your attempt — as you only had one egg : ) But overall, puff pancakes do take on a crepe-like texture and crumb with the edges being drier and crispier. So if that's what you achieve, then you've done it right : ) If I am wrong here, please please correct me.

Would anyone like to be a tester with the egg-free version? Let me know : )

I made this this am and I used ground buckwheat in place of the GF Flour and I used Liquid Vanilla creme stevia and no vanilla extract. Its wonderful!!!! Oh and I added Flaxseed and Bee Pollen (which I sprinkle on everything) Thanks for the recipe
