I am always on the lookout for wholesome, power-packed bites to have at the ready for when I’m running out the door. This week I stumbled upon Elana’s Pantry Gluten-Free Almond Power Bars. Perfect, I thought, and wasted no time in making a batch. I was in love at first bite and have found a keeper. What attracts me to Elana’s recipes are their simplicity and this one is no exception. Gluten-Free Almond Power Bars

Gluten-Free | Casein-Free | Citrus-Free | Corn-Free | Dairy-Free | Egg-Free | Fish-Free | Nightshade-Free | Peanut-Free | Potato-Free | Rice-Free |Shellfish-Free | Soy-Free | Wheat-Free | Grain-Free | Sesame-Free | Yeast-free | GFCF | Vegetarian | Easily Vegan | Easily Raw

Makes: 16-20 bars
Prep Time: 15 minutes
Chill Time: 2-3 hours

Ingredients:

2 cups raw ALMONDS

1/2 cup FLAX MEAL

1/2 cup unsweetened shredded COCONUT

1/2 cup unsalted creamy roasted ALMOND BUTTER

1/2 teaspoon cup COCONUT OIL

1/2 teaspoon celtic SEA SALT

4 drops liquid STEVIA

1 tablespoon AGAVE NECTAR

1 tablespoon VANILLA EXTRACT

1 cup dark CHOCOLATE CHIPS 73% cacao (optional)

Notes:

The only substitution I made was 1/4 cup CHIA SEED for the 1/2 cup FLAX MEAL (I was out). The chia seed gave the bars a fun crunch and something to pick out of my teeth!

These bars are best kept refrigerated or frozen.

I enjoy pecan pie Lara bars. That seems to be my 'go to' when I'm out running around and realize I forgot to eat. I try to keep one in my purse at all times.

I was able to get a hold of Elana's cookbook through our inter-library loan and sadly had to give it back today:( I like it so much I decided I must have it. I have not tried these bars but am planning on making her chocolate chip scones tonight. Question: Is flax meal just ground up flax seed?

My favorite would definitely be quinoa, raisins, and my homemade hummus all mixed up! It sounds icky, but don't knock it till you try it 😉

Wraps are my quick grab and go! SO filling I fill them wild mushroom pate', or eggplant dip, or hummus. SO delicious!

I can't wait to try these! I like what I call "Coconut Date Balls." Coconut butter and oil, shredded coconut, dates, rolled in coconut or unsweetened cocoa. Add nuts if you want more protein.

a quick quinoa tabbouleh made with extra tomatoes and chickpeas. so good! i make a huge bowl of it at the beginning of the week and divvy it out into separate containers as i go.

high in protein and fiber!

My favorite healthy grab and go food is a handful of dried fruit and nuts – or if I'm feeling particularly lazy, a Lara Bar.

Hello! my favorite grab and go snack is carrot sticks or cut up bell peppers. Although I think I will try this recipe minus the coconut Yum! 🙂

Hi. Happy New Year. The bars look wonderful, of course. You and Elana both are always so full of good ideas sometimes it just leaves my brain exhausted! My favorite grab and go food, you'll laugh are just dates and/or nuts – now that's simple. I must admit though that sometimes I'll grab frozen cookies or mini muffins that I keep in the freezer for emergencies. I package them in sets of 3 and then just grab whatever's in there,throw it in my purse and I'm gone. If I need a snack later it'll have defrosted. If I don't need it I put it back in the fridge for later.

Homemade Roasted Pumpkin Seeds or Fruit with Honey Almond Butter… Always depends on the day, but those seem to be easy and treat my tummy well!

Thanks for sharing your great recipes (and great recipe finds!), as well as your family's journey.
My favorite fast snack is a slice of toast, spread with almond butter, topped with raw organic chia seeds, raw finely shredded coconut, and topped with a few of EnjoyLife brand mini chips. Just smoosh the toppings into the almond butter so they don't fall off when you're running out the door.

My fave used to be home made WW bread with almond butter and local honey…but after making and trying the almond power bars, they are my new favorite! They are pretty yummy.

Green apples are a quick favorite, or if I have a touch more time, I've been enjoying carrot sticks wrapped in peppered turkey slices. I used to do nuts and dried fruit, but have cut bakc on nuts that aren't soaked.

My favorite snack has become Raw Revolution Food Bars. They are gluten and dairy free and have sprouted flax seed…I LOVE flax seeds! They are a great pick me up or snack when you're on the go!

For an easy on-the-go treat, I like Larabars, dry Chex cereal, or pistachios! yummy. I am dying to get a look at that almond flour cookbook but my library doesn't carry it!

Let's put it this way, I use about 1/2 to 3/4 the amount of chia. Does that help?

Wow these look amazing, I am planning on making them tomorrow! I would love to be able to try other recipes from this book.

My favorite grab-and-go snacks are the most simple healthy flourless cookies that I make each week. Just blend together 1 Cup Walnuts, 5 Dates, 1 tsp Olive Oil, 1 tsp Vanilla, 1 tsp Cinnamon until they start to bind, put on a baking tray and bake for 8-10 minutes at 350. These are so quick and simple, but are a very tasty snack that you can feel good about!

I cannot wait to try these bars for my son with a substitute for the almonds and using sun butter. Has it been done yet?

Our favorite grab and go snack has been a life saver, literally!! The Amazing Grass brand Super Food Energy Bars has helped us so much. We take them everywhere! My yogi and healthy eating husband was able to take a case of them in his duffel bag on a church youth group trip last summer from CT to New Orleans.

Thanks for all you do Lexie, you are sustenance in our home like water!

Just noticed that your recipe states1/2 teaspoon of Coconut oil and the original (the one you link to) states 1/2 cup. Which one is correct?

Natalie … great catch!! Thank you! Now it makes me wonder if people have made these with 1/2 teaspoon vs. 1/2 cup. I have updated my measure above to 1/2 cup coconut oil. That said, I wonder if we could get by with less? Coconut oil is fantastic at helping to harden a bar like this — especially when it is chilled. So if you want a few less calories and a softer bar, you could possibly go with less?? Haven't tried it. : )

These are so good!! Thanks for the recipe!! I didn't have any dark chocolate to melt so I just threw in some raw cacao, cacao powder and you little more agave. Love these!!
