Gluten Free Vegan Chocolate Chip Mug Cookie

3 minutes from now you could be enjoying the most oooey, gooey Gluten Free Vegan Chocolate Chip Mug Cookie you’ve ever sunk a spoon into. What are you waiting for?

The other night as I cruised Pinterest, I spied an Instant Chocolate Chip Cookie that was to drool for. So I re-pinned it and left a comment asking if it could be modified to be gluten-, dairy-, and egg-free.

To my delight, Erin of Sift, Stir & Savour responded with an enthusiastic “Yes it can!” {UPDATE: Erin’s site was not live when checked on 7-16-18]

Well, be still my heart, and thank you Erin! We have made this Gluten Free Vegan Chocolate Chip Mug Cookie for dessert for the last three nights, and each time, oh man, good stuff. I mean how can you beat making—and eating—a warm, gooey chocolate chip cookie in under five minutes!?

Try it! I dare you.

Using Erin’s original recipe, I cut the chocolate chips in half to reduce the sweetness and added an extra pinch of salt and two pinches of baking soda to “up” the cookie dough taste. Thanks Erin!!

Chocolate Chip Mug Cookie — GF, Vegan

Chocolate Chip Mug Cookie — GF, Vegan

Ingredients

  • 1 tablespoon unsweetened APPLESAUCE
  • 2 tablespoons COCONUT SUGAR (or any granulated sugar)
  • 2 tablespoons nondairy YOGURT (I used SoDelicious Vanilla Coconut)
  • 1/4 teaspoon gluten-free VANILLA EXTRACT 
  • 1/4 cup gluten-free OAT FLOUR (I grind oats in my blender or coffee grinder)
  • 2 pinches SALT
  • 2 pinches BAKING SODA
  • 1 tablespoon allergen-free CHOCOLATE CHIPS

Instructions

  1. Grease a smallish mug.
  2. Add all ingredients to a small mixing bowl.
  3. Whisk until smooth.
  4. Pour batter into greased mug.
  5. Microwave on high for 2 minutes and 15 seconds or until top is firm to touch and bounces back. Time may vary according the wattage of your microwave.
  6. Allow to cool 2-3 minutes. As with traditional cookies, the longer it cools the firmer it gets.
  7. Enjoy!

Notes

Note: Though I have yet to try it, Shirley of GFE left a comment saying she used almond flour in place of the oat flour and that it came out great. Thanks Shirley!

So good!! Now I have a great "go to" treat/dessert, thanks to you! Does anyone have suggestions about using this in a counter top convection oven instead of a microwave.?. we got rid of the microwave a few yrs ago due to all the things we learned about how bad it is . Would love to be able to bake this in individual little ramekins or oven proof mugs.

I have tried a lot of different GF baked goods and mug cakes and this is by far the best GF mug cookie I've ever made. Thanks for the recipe! I didn't have any apple sauce so I just used an extra tbs of yogurt and it was great!
