Gluten Free Dairy Free French Fried Onions

by ALEXA

With Thanksgiving just days away, I was desperate for gluten free dairy free French fried onions to top my green bean casserole with. I mean, really, what’s green bean casserole without French fried onions?

Gluten Free French Fried Onions

You’ll have to forgive me. This recipe is launching forth before it has reached absolute perfection. With Thanksgiving just days away, I was desperate for gluten free dairy free French fried onions to top my green bean casserole with. I mean, really, what’s green bean casserole without French fried onions?

Now, I’m not saying this recipe doesn’t deliver—because it surely does. What I AM sayin’ is that the perfectionist in me wanted to toy with it one more time to see if I could achieve the lovely, golden, deep fried color that French’s delivers. But time is of the essence!

These come out super crunchy and onion-y, but not super golden. If anyone wants to take over from here and achieve “golden,” have at it and let me know your secret. I am thinking a tablespoon or two of potato flour (not starch) added to the coating? Potato flour browns up much better than rice flour—but too much and it becomes a gummy mess.

ANYWAY, here you go and Happy Thanksgiving (to all of you state side). Thank you for faithfully visiting my kitchen over the years. YOU are the gluten free dairy free French fried onions on my green bean casserole!

Gluten Free Dairy Free French Fried Onions

Yield: 3-4 cups French Fried Onions

Gluten Free Dairy Free French Fried Onions

Ingredients

  • 4 cups water
  • 3 tablespoons fresh lemon juice or vinegar
  • Oil for frying
  • 2 very large onion
  • 3/4 cup superfine rice flour
  • 3/4 cup tapioca starch
  • 2 1/2 teaspoons salt
  • 2 teaspoons granulated sugar
  • 2 teaspoons granulated onion
  • 1 teaspoon sweet paprika, (optional for color)
  • 1/4 teaspoon pepper

Instructions

  1. In a large bowl combine water and lemon juice.
  2. Peel, halve and slice onions into thin rings. Spot chop the longer strings into 1-2" pieces.
  3. Add onions to lemon water and soak for 15-30 minutes (this tames the onions a bit).
  4. Heat about 2 inches of deep frying oil (I use avocado) to approximately 325F in a medium frying pan.
  5. In another large bowl combine rice flour, tapioca starch, salt, sugar, granulated onion and pepper.
  6. Drain onions and discard water.
  7. Working in batches, toss onions to coat in flour mixture.
  8. Shake off excess flour.
  9. Add to hot oil and fry until onions begin to brown, but not burn.
  10. Using a slotted spoon transfer to a paper towel-lined plate.
  11. Repeat with remaining onions.
  12. Store in an airtight container and use within a few days.

Notes

After storing, onions can be crisped up in a warm oven.

Great timing: I need this recipe; the last time we made onion rings, they were not crispy (coz all the breading stayed at the bottom of the fry pan, oh noes)! We had not thought of fine ground rice flour for the onion ring breading: perfect, LOL (we had earlier whined about rice flour retaining too much crunch, in cookies and mochi)!

Made this last year and it was definitively better than traditional! Was our first dairy-fee Thanksgiving and I was so grateful to find this recipe. It’s will be on the table again this year! Was a hit, even with people who can eat everything. Thank you!!
