Dairy Free Chocolate Veggie Fudge Pops

This morning I was up with the rooster making more of these Dairy Free Chocolate Veggie Fudge Pops. I knew the thermometer would be rising hot and fast and I wanted to get the freezer restocked with these no-guilt treats.

The Under 5 Rule

No-guilt in my book equates to 5 grams of sugar or less per serving. Our family calls it The Under 5 Rule and is a helpful little guideline I picked up from Autism and ADHD Nutrition Specialist, Julie Matthews.

The rule is simple. Enjoy foods that deliver no more than 5 grams of sugar per serving.

This rule has become part of our family food code—our personal code for eating congruent with our values and bodily needs, and one that avows that we’re not perfect eaters all the time.

The Under 5 Rule really helps keep our sugar intake in check. It also has been a lifesaver at the grocery store. If sugar on a nutrition label is over 5 grams, the box goes back on the shelf.

More often than not, The Under 5 Rule applies to goodies we make at home as well.

These Dairy Free Chocolate Veggie Fudge Pops are a good example of how I achieve perfectly sweet in an Under 5 treat. The trick is in combining sweeteners. I’ll go into that in a sec. But before I do I have a little something to whisper in your ear. I amped up the goodness of these pops with a little something extra—a dose of veggies. Yes, some glorious greens!

Hidden in these pops is a half serving of spinach and collards. Believe me when I say that the power greens go completely undetected. The secret is in masking the green hue of the veggies with a dark cocoa like Hershey’s Special Dark Cocoa Powder. Or try a combination of raw cacao and a super dark cocoa like Black Onyx.

Sweetening the Zero-Calorie Way

In this recipe, I leave the choice of how to sweeten these pops up to you. If you want to hit The Under 5 Rule, you’ll need to use a zero-calorie sweetener in combination with a caloric sugar like honey, cane sugar, coconut sugar or maple syrup. In this recipe I achieved under 5 grams of sugar per pop and a perfectly balanced “sweet” using a combination of 2 tablespoons pure maple syrup and 15 drops of stevia extract.

My Favorite Pop Mold

Admittedly, I collect frozen pop molds like Imelda Marcos collected shoes. I like the Prepworks by Progressive Freezer Pop Maker (affiliate link) found on Amazon for its classic frozen pop shape. It makes 10 at a time—enough for my boys and all their friends. But really, any mold will do.

Serves: 10 - 2.5 ounce pops Prep Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

1 pint SoDelicious Original Coconutmilk Creamer or 2 cups full fat coconut milk
1 1/2 cups any combination of frozen kale, spinach, chard or collard greens (see notes)
4 tablespoons Hershey's Special Dark Cocoa Powder
Sweetener to taste (see notes)
3/4 teaspoon guar gum (optional)

Instructions

Add all ingredients to blender carafe.
Blend on high until smooth.
Pour into popsicle molds, freeze and enjoy!

Notes

I use frozen greens as they have been blanched prior to freezing which makes them easier for most blenders to handle. I you don't have a high-powered blender, I suggest thawing the greens before blending.

The way I sweeten these pops is with 3 tablespoons of pure maple syrup and 15 drops of NuStevia

Guar gum is something I add to "up" the creaminess of non-dairy frozen milk desserts. It is totally optional.

If sugar content doesn't concern you, omit the sweetener to taste and use a pint of the sweetened SoDelicious French Vanilla Coconutmilk Creamer in place of Original flavor. Rough math puts each pop at 14g of sugar.
