Dairy Free Vegan Chocolate Cheesecake

This Dairy Free Vegan Chocolate Cheesecake is one of my all-time favorite recipes here on Flo and Grace. It can be made in a single 6- or 8-inch springform pan or in a 12 mini cheesecake pan (affiliate link).

The base of this Dairy Free Vegan Chocolate Cheesecake comes from my Mini Strawberry Cheesecake.  It’s just been lightened it up a bit with some So Delicious non-dairy yogurt. The result; a cross between a cheesecake and frozen yogurt. You’ll get the silkiest results with a high-powered blender like a Blendtec or Vitamix.

These are the bomb when frozen and allowed to thaw a bit prior to serving. I encourage you to take it to yet another level with the decadent dairy-free Kahlua Ganache. It won’t let you down!

But real quick before we get to the recipe, I have a funny for you. Let’s call it the Blogger Tip ‘O The Day.

So if you’re a blogger and your site is stalling a bit, take my advice and post a chocolate recipe. You’re bound to see traffic rebound in a jiffy. The proof is in the pudding—or ahem, in the chocolate brownie—we LOVE our chocolate!

Dairy Free Chocolate Cheesecake | Gluten Free and Vegan, too!

Dairy Free Vegan Chocolate Cheesecake with Kahlua Ganache

Serves: One 6-8" cheesecake (serves 4-6) Prep Time: Cooking Time:

Ingredients

For the Crust:
1 3/4 raw walnuts
1/4 cup flaxseed meal
2 tablespoons cocoa powder
1/4 teaspoon baking powder
Pinch salt
1/4 cup coconut oil, melted
2 tablespoons maple syrup

For the Filling:
1 cup raw cashew pieces, soaked for 4 hours and rinsed well
1 cup non-dairy vanilla yogurt (like So Delicious)
1/3 cup coconut oil, melted
1-1/2 tablespoons fresh lime juice
1/4 cup coconut sugar (or sweetener of choice)
3 tablespoons cocoa powder
8 drops liquid stevia (or sweeten to taste with more sugar)
1/4 scant teaspoon salt

For the Ganache:
1/3 cup coconut cream (see notes)
1/3 cup non-dairy chocolate chips
Optional 2 tablespoons Kahlua liqueur

Instructions

Soak cashews in a bowl of water for 2-4 hours. To speed up the process, soak in very hot water for 10 minutes.
Preheat oven to 350F.
Line the bottom of a 6- to 8-inch springform pan with baking parchment.
Add crust ingredients to the bowl of a food processor fitted with the S blade. Pulse to graham cracker crust texture.
Press crust firmly into pan. Bake 10 minutes and let cool completely.
Rinse and drain cashews. Add to container of a high-powered blender and blend on high until super smooth.
Pour cheesecake filling over cooled crust. Gently tap pan on counter to release trapped air bubbles.
Freeze 3-5 hours or until firm.
Meanwhile, make the ganache by heating the coconut cream over medium heat in a small saucepan until liquefied. Remove from heat and stir in chocolate chips and liqueur. Stir until smooth and let cool.
Remove cheesecake from freezer 15 minutes prior to serving.
Unmold and transfer to serving plate.
Top with ganache and serve.
Store leftovers in freezer or refrigerator.

Notes

For Coconut Cream: Set a 14 fl. oz. can of full-fat coconut milk in a cool spot for 24-48 hours. Open can and spoon off the white solids. This is "coconut cream." Use the remaining coconut liquid in a smoothie.

We had to control ourselves not to eat the whole thing tonight – And I made a double batch! haha But we did control ourselves so we can eat the other half tomorrow. Even Andy was loving it and he isn't much for "cheesecakes." He mostly just likes fruit pies.

Kayla … try refined coconut oil. Refined has been deodorized. There is no replacement for coconut oil in this recipe as it is what lends firmness to the cheesecake. Here is a bit on the difference between refined and unrefined coconut oil: "Difference from Pure Coconut Oil: Refined Coconut Oil differs from pure coconut oil in many respects. First, you won’t find any scent (typical coconut scent) or taste of coconut in it, unlike in pure coconut oil. This deodorization is deliberately done since although many may like the scent of coconut in their cooking oil, there are many who don’t. Being refined, it is certainly more hygienic than the crude coconut oil, but not that beneficial from the point of view of health. It is left with almost no proteins or minerals.
