When the kids are at school and the husband is at work, I feel quite fancy sitting down to a bowl of this Easy Seafood Soup for lunch. It’s so pretty and elegant, don’t you think?

Well joy of joys, let us fear squid and shellfish no more (unless you are allergic, of course)! A bag of Costco mixed frozen seafood has rocked my culinary world—completely removing the fear factor of cooking with crustaceans.

This recipe is my take on a Seafood Soup I order every time we are out at Blue Agave Grill. It has got so much class—perfect as part of a 5-course meal or for a stay-at-home-mom who needs to feel a little fancy!

Easy Seafood Soup

Ingredients

  • 1 clove garlic, peeled and smashed
  • 1 tablespoon coconut oil
  • 2 tablespoons little dried shrimp (see Notes)
  • 3 cups chicken broth
  • 3 cups water
  • 1-1/4 teaspoons salt or to taste
  • 1 teaspoon turmeric
  • 1 pinch saffron, optional
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground white pepper or to taste
  • 3 cups mixed frozen seafood (usually calamari, mussels, baby scallops, shrimp—see Notes)
  • 2 frozen cod filets or another 2-3 cups of mixed seafood
  • 3 cups cooked white rice
  • Cilantro for garnish

Instructions

  1. In a large soup pot saute garlic in oil for one minute. Add dried shrimp and saute another minute. Add chicken broth, water, salt, turmeric, saffron, onion powder and white pepper. Bring to a boil, reduce to low simmer and cook 15 minutes.
  2. Strain shrimp and garlic from broth and discard. Return broth to pot and stir in mixed frozen seafood and frozen fish. Cover and simmer until seafood is cooked through, 5-10 minutes.
  3. Using a fork, gently separate fish filets into large chunks.
  4. Scoop a bit of rice into serving bowls and top with seafood and broth. Garnish with cilantro.

Notes

Look for tiny dried shrimp at Asian grocery stores or on Amazon (just look out for questionable additives). Bags of frozen mixed seafood or seafood medleys can be found at Costco and most large grocery chains. My local Kroger store carries one. I like to make a bunch of the broth and freeze it in single-serving mason jars so that when I need a quick lunch I can heat up the broth, add the mixed seafood and simmer a few minutes until done.
